chicken parmesan recipe

as requested from the comments, here’s my recipe for chicken parm:

– 4 chicken thighs (you can used breasts of course if you like, but i like dark meat)
– 3 or 4 eggs
– flour
– bread crumbs
– sauce of your choice (i made my own tomato basil sauce)
– fresh mozzarella
– parmesan cheese
– olive oil
– spaghetti

preheat oven to 350 degrees. pound out the chicken with some plastic wrap on top. the chicken should be very thin and be 2-3 times larger than when you started. season the chicken with salt and pepper. pour some flour into a shallow dish. beat the eggs in another dish. pour bread crumbs into another dish (i didn’t have bread crumbs handy that day, so i toasted a few slices in the oven and put them in the food processor). dredge the chicken in the flour, then the egg, then the bread crumbs. cook the chicken in the olive oil until browned on both sides (shouldn’t take long as the chicken is now very thin). get out a baking dish and pour some of your tomato sauce in the bottom. place the chicken into the dish and spoon over more of the tomato sauce. top with mozzarella cheese and parmesan cheese. cook in the oven about 15 minutes or until the cheese is bubbly and brown. serve with cooked spaghetti. mmm!
